  • 14 oz Extra-firm tofu pressed and crumbled
  • 1/2 medium Onion chopped
  • 1/2 medium Bell pepper chopped (any color)
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 cup Vegan cheese shreds
  • 8 Corn or flour tortillas small size
  • Your favorite toppings salsa, avocado, hot sauce

  • Press the tofu to remove excess water. Crumble it into a mixing bowl.
  • Add the chopped onion, bell pepper, nutritional yeast, garlic powder, cumin, salt, and pepper to the bowl. Mix well to combine.
  • Heat a large skillet over medium heat. Add the tofu mixture and cook, stirring occasionally, until the tofu is heated through and lightly browned, about 8-10 minutes.
  • Warm the tortillas according to package instructions.
  • Fill each tortilla with the scrambled tofu mixture and top with vegan cheese shreds.
  • Fold the tortillas in half or leave them open. Serve immediately with your favorite toppings.

Notes

For a spicier kick, add a pinch of chili powder or some chopped jalapeños to the tofu mixture. You can also use different vegetables, such as spinach or mushrooms.
