Steak:
- 1 pound sirloin or ribeye steak cut into 1-inch cubes

Potatoes:
- 1.5 pounds Yukon Gold or red potatoes quartered or cut into bite-sized pieces
- 2 tablespoons olive oil

Garlic Butter Sauce:
- 6 tablespoons unsalted butter
- 4 cloves garlic minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh rosemary optional
- 1/4 teaspoon red pepper flakes optional, for heat
Prepare the Potatoes: Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
Sear the Steak: While potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season steak bites generously with salt and pepper. Add steak to the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Sear for 2-3 minutes per side for medium-rare, or longer for desired doneness. Remove steak from skillet and set aside.
Make the Garlic Butter Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute, until fragrant, being careful not to burn it. Stir in parsley, rosemary (if using), and red pepper flakes (if using).
