Quick, easy, and delicious no-bake cookies made with oats, cocoa powder, and peanut butter (or other nut butter). Perfect for a fast treat!

- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup milk
- 1/2 cup 1 stick unsalted butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1/2 cup peanut butter or other nut butter

- Pinch of salt
Combine ingredients: In a medium saucepan over medium heat, combine sugar, cocoa powder, milk, butter, and salt.
Bring to a boil: Stir constantly until the mixture comes to a rapid boil.
Cook: Once boiling, let it cook for 1 minute, stirring constantly.
Remove from heat: Remove the saucepan from the heat.
Add remaining ingredients: Stir in vanilla extract and peanut butter until smooth. Then, stir in the quick-cooking oats until they are well coated.
Drop onto baking sheet: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet.
Cool and set: Let the cookies cool at room temperature for at least 30 minutes, or until they are set.
- Use quick-cooking oats, not rolled oats or steel-cut oats.
- You can use any type of nut butter you prefer.
- For a richer flavor, use real butter.
- If the mixture is too thick, add a little more milk.
- If the cookies are too soft, refrigerate them for a while.
- Get creative with mix-ins! Try adding chocolate chips, chopped nuts, shredded coconut, or dried fruit.
- Store in an airtight container at room temperature.
