Quick, easy, and delicious no-bake cookies made with oats, cocoa powder, and peanut butter (or other nut butter). Perfect for a fast treat!

Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup 1 stick unsalted butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1/2 cup peanut butter or other nut butter
  •  
  • Pinch of salt

Instructions
 

  • Combine ingredients: In a medium saucepan over medium heat, combine sugar, cocoa powder, milk, butter, and salt.
  • Bring to a boil: Stir constantly until the mixture comes to a rapid boil.
  • Cook: Once boiling, let it cook for 1 minute, stirring constantly.
  • Remove from heat: Remove the saucepan from the heat.
  • Add remaining ingredients: Stir in vanilla extract and peanut butter until smooth. Then, stir in the quick-cooking oats until they are well coated.
  • Drop onto baking sheet: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet.

  • Cool and set: Let the cookies cool at room temperature for at least 30 minutes, or until they are set.

Notes

  • Use quick-cooking oats, not rolled oats or steel-cut oats.
  • You can use any type of nut butter you prefer.
  • For a richer flavor, use real butter.
  • If the mixture is too thick, add a little more milk.
  • If the cookies are too soft, refrigerate them for a while.
  • Get creative with mix-ins! Try adding chocolate chips, chopped nuts, shredded coconut, or dried fruit.
 
  • Store in an airtight container at room temperature.
