A vibrant and refreshing summer salad featuring sweet grilled peaches, creamy burrata cheese, and peppery arugula, drizzled with a simple balsamic vinaigrette. Perfect as an appetizer, side dish, or light meal.

Ingredients
  

  • 2-3 ripe peaches halved and pitted
  • 8 ounces burrata cheese
  • 5 ounces fresh arugula or mixed greens
  • 2 tablespoons olive oil for grilling

Dressing:

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey optional
  • Salt and freshly ground black pepper to taste

Optional Toppings:

  • Fresh basil or mint leaves
  • Toasted nuts almonds, walnuts, pecans
  • Balsamic glaze
  • Microgreens

Instructions
 

  • Prepare the peaches: Preheat your grill to medium-high heat. Brush the cut sides of the peaches with olive oil.
  • Grill the peaches: Place the peaches, cut side down, on the grill and cook for 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Remove from grill and let cool slightly. Slice into wedges.
  • Prepare the dressing: In a small bowl, whisk together balsamic vinegar, olive oil, honey (if using), salt, and pepper until emulsified.
  • Assemble the salad: In a large serving bowl or platter, arrange the arugula.
  • Add burrata and peaches: Gently tear or slice the burrata cheese and place it on top of the arugula. Arrange the grilled peach wedges around the burrata.
  • Drizzle with dressing: Drizzle the balsamic vinaigrette over the salad.
  • Add toppings (optional): Sprinkle with fresh basil or mint leaves, toasted nuts, balsamic glaze, or microgreens, if desired.
  • Serve immediately: Serve the salad immediately to prevent the arugula from wilting.

Notes

  • Choose ripe but firm peaches for grilling.
  • Adjust grilling time based on the ripeness of the peaches and the heat of your grill.
  • Use high-quality burrata cheese for the best flavor and texture.
