Grilled Peach and Burrata Salad

- 2-3 ripe peaches halved and pitted
- 8 ounces burrata cheese
- 5 ounces fresh arugula or mixed greens
- 2 tablespoons olive oil for grilling
Dressing:
- 3 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey optional
- Salt and freshly ground black pepper to taste
Optional Toppings:
- Fresh basil or mint leaves
- Toasted nuts almonds, walnuts, pecans
- Balsamic glaze
- Microgreens
Prepare the peaches: Preheat your grill to medium-high heat. Brush the cut sides of the peaches with olive oil.
Grill the peaches: Place the peaches, cut side down, on the grill and cook for 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Remove from grill and let cool slightly. Slice into wedges.
Prepare the dressing: In a small bowl, whisk together balsamic vinegar, olive oil, honey (if using), salt, and pepper until emulsified.
Assemble the salad: In a large serving bowl or platter, arrange the arugula.
Add burrata and peaches: Gently tear or slice the burrata cheese and place it on top of the arugula. Arrange the grilled peach wedges around the burrata.
Drizzle with dressing: Drizzle the balsamic vinaigrette over the salad.
Add toppings (optional): Sprinkle with fresh basil or mint leaves, toasted nuts, balsamic glaze, or microgreens, if desired.
Serve immediately: Serve the salad immediately to prevent the arugula from wilting.
