Ingredients
  

  • 2-3 medium apples Honeycrisp, Fuji, or Granny Smith, cored and thinly sliced
  • 1 cup walnuts roughly chopped
  • 4 cups mixed greens arugula, spinach, or spring mix

Honey Dressing:

  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper to taste

Optional Add-ins:

  • Dried cranberries
  • Crumbled feta or goat cheese
  • Sliced avocado
  • Red onion thinly sliced

Instructions
 

  • Prepare the apples: Wash and core the apples. Thinly slice them, keeping the peel on.
  • Prepare the walnuts: Roughly chop the walnuts.
  • Make the dressing: In a small bowl, whisk together honey, olive oil, apple cider vinegar, salt, and pepper until emulsified.
  • Assemble the salad: In a large bowl or on a serving platter, place the mixed greens. Arrange the apple slices on top of the greens.
  • Add walnuts and other add-ins: Sprinkle the chopped walnuts and any optional add-ins (cranberries, cheese, etc.) over the salad.
  • Dress and serve: Drizzle the honey dressing over the salad just before serving. Toss gently to combine.

Notes

  • Use a variety of apples for a mix of sweetness and tartness.
  • Toast the walnuts lightly in a dry skillet for enhanced flavor.
  • Adjust the honey dressing ingredients to your taste preferences.
  • Get creative with your add-ins!
  • This salad is best served immediately to prevent the apples from browning and the greens from wilting.
