- 2-3 medium apples Honeycrisp, Fuji, or Granny Smith, cored and thinly sliced
- 1 cup walnuts roughly chopped
- 4 cups mixed greens arugula, spinach, or spring mix
Honey Dressing:
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
Optional Add-ins:
- Dried cranberries
- Crumbled feta or goat cheese
- Sliced avocado
- Red onion thinly sliced
Prepare the apples: Wash and core the apples. Thinly slice them, keeping the peel on.
Prepare the walnuts: Roughly chop the walnuts.
Make the dressing: In a small bowl, whisk together honey, olive oil, apple cider vinegar, salt, and pepper until emulsified.
Assemble the salad: In a large bowl or on a serving platter, place the mixed greens. Arrange the apple slices on top of the greens.
Add walnuts and other add-ins: Sprinkle the chopped walnuts and any optional add-ins (cranberries, cheese, etc.) over the salad.
Dress and serve: Drizzle the honey dressing over the salad just before serving. Toss gently to combine.
