Ingredients

  • 1 pound flank steak or sirloin thinly sliced against the grain

Marinade:

  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon cornstarch
  • 1 tablespoon rice wine or dry sherry
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 cup snow peas or snap peas

Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce or hoisin sauce
  • 1 tablespoon rice wine
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil

Instructions

  • Marinate the Beef: In a bowl, combine soy sauce, cornstarch, rice wine, and sesame oil. Add the sliced beef and toss to coat. Marinate for at least 10 minutes while you prepare the other ingredients.
  • Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce (or hoisin sauce), rice wine, brown sugar, and sesame oil. Set aside.
  • Stir-Fry the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes, until browned and cooked through. Remove the beef from the skillet and set aside.
  •
  • Stir-Fry the Vegetables: Add the onion to the skillet and stir-fry for 2 minutes. Add the garlic and ginger and stir-fry for 30 seconds. Add the broccoli and bell pepper and stir-fry for 3-4 minutes, until tender-crisp. Add the snow peas and stir-fry for another minute.
  • Combine and Serve: Return the beef to the skillet. Pour the sauce over the beef and vegetables and stir-fry for 1-2 minutes, until the sauce has thickened slightly. Serve immediately over rice or noodles.

Notes

  • Beef: Flank steak or sirloin are best for stir-frying. Slice the beef thinly against the grain for maximum tenderness.
  • Vegetables: Use any vegetables you like. Other good options include carrots, mushrooms, bok choy, and zucchini. Cut the vegetables into bite-sized pieces for even cooking.
  • Sauce: Adjust the sauce ingredients to your preference. You can add more or less sugar, soy sauce, or oyster sauce. A dash of red pepper flakes can add some heat.
  • Cooking Time: The cooking time for the beef and vegetables may vary depending on the thickness of the slices and the heat of your stove. The key is to stir-fry quickly over high heat, so the ingredients cook evenly and retain their crispness.
  • Serving Suggestions: Serve the stir-fry over steamed rice, brown rice, quinoa, or noodles. You can also garnish with sesame seeds or chopped green onions.
  • Gluten-Free: Use tamari instead of soy sauce for a gluten-free option.
