2 large ripe tomatoes (chopped into wedges)
1 medium cucumber (peeled and sliced into half-moons)
1 small red onion (thinly sliced)
1 green bell pepper (diced)
1 cup Kalamata olives
200g feta cheese (cut into cubes or crumbled)
3 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tsp dried oregano
Salt and pepper (to taste)
Prepare the Vegetables:
Wash and chop the tomatoes into wedges.
Peel and slice the cucumber into half-moons.
Thinly slice the red onion and dice the green bell pepper.
