Savory Garlic Butter Steak Bites with Crispy Potatoes

These Garlic Butter Steak Bites with Crispy Potatoes are a decadent and satisfying meal, perfect for a special occasion or a comforting weeknight dinner. Tender steak bites are seared to perfection and tossed in a rich garlic butter sauce, then served alongside crispy, golden potatoes.

  • Steak:
    • 1 pound sirloin or ribeye steak, cut into 1-inch cubes   
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • Potatoes:
    • 1.5 pounds Yukon Gold or red potatoes, quartered or cut into bite-sized pieces
    • 2 tablespoons olive oil
    • Salt and pepper to taste
  • Garlic Butter Sauce:
    • 6 tablespoons unsalted butter
    • 4 cloves garlic, minced
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon chopped fresh rosemary (optional)
    • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  • Prepare the Potatoes: Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
  • Sear the Steak: While potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season steak bites generously with salt and pepper. Add steak to the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Sear for 2-3 minutes per side for medium-rare, or longer for desired doneness. Remove steak from skillet and set aside.
  • Make the Garlic Butter Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute, until fragrant, being careful not to burn it. Stir in parsley, rosemary (if using), and red pepper flakes (if using).
  • Combine Steak and Potatoes: Return the steak bites to the skillet with the garlic butter sauce. Toss to coat. Add the crispy roasted potatoes to the skillet and toss everything together.
  • Serve: Serve immediately, garnished with extra parsley if desired.

Notes

  • Steak Cuts: Sirloin and ribeye are great choices for steak bites. You can also use filet mignon, but it’s more expensive.   
  • Potato Variety: Yukon Gold potatoes are ideal for crisping up, but red potatoes or even russets can work too.
  • Doneness of Steak: Adjust searing time based on your preferred doneness. Use a meat thermometer to ensure the steak reaches your desired internal temperature.
  • Garlic Butter Sauce: Be careful not to burn the garlic, as it can become bitter.
  • Adding Vegetables: You can add other vegetables to the skillet along with the potatoes, such as bell peppers, onions, or mushrooms.
