Watermelon Feta Mint Salad

A refreshing and vibrant summer salad featuring sweet watermelon, salty feta cheese, and fragrant mint. Perfect as a light appetizer, side dish, or snack.

Ingredients

Scale
  • 4 cups cubed watermelon (seedless preferred)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, roughly chopped
  • Optional Add-ins:
    • 1/4 cup thinly sliced red onion
    • Drizzle of balsamic glaze
    • Toasted almonds or walnuts
    • Lime juice
    • Cucumber, diced

Instructions

  • Prepare the watermelon: Cut the watermelon into 1-inch cubes.
  • Assemble the salad: In a large bowl, gently combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves.
  • Add optional ingredients (if using): Add sliced red onion, balsamic glaze, or toasted nuts, if desired.
  • Toss gently: Gently toss the salad to combine all ingredients.
  • Let it rest: Let the salad sit for 15-20 minutes at room temperature to allow the flavors to meld.
  • Serve: Serve the salad chilled or at room temperature.

Notes

  • Choose a ripe, sweet watermelon for the best flavor.
  • Use good-quality feta cheese, preferably from sheep’s milk, for a richer taste.
  • Fresh mint is essential for the refreshing flavor of this salad.
  • Gentle tossing prevents the watermelon from breaking apart.
  • For a tangy dressing drizzle a little lime juice over the whole salad.
  • This salad is best served fresh, but leftovers can be stored in the refrigerator for a few hours.
