A vibrant and refreshing summer salad featuring sweet grilled peaches, creamy burrata cheese, and peppery arugula, drizzled with a simple balsamic vinaigrette. Perfect as an appetizer, side dish, or light meal.

  • 23 ripe peaches, halved and pitted
  • 8 ounces burrata cheese
  • 5 ounces fresh arugula (or mixed greens)
  • 2 tablespoons olive oil (for grilling)
  • Dressing:
    • 3 tablespoons balsamic vinegar
    • 2 tablespoons extra virgin olive oil
    • 1 teaspoon honey (optional)
    • Salt and freshly ground black pepper to taste
  • Optional Toppings:
    • Fresh basil or mint leaves
    • Toasted nuts (almonds, walnuts, pecans)
    • Balsamic glaze
    • Microgreens

Instructions

  1. Prepare the peaches: Preheat your grill to medium-high heat. Brush the cut sides of the peaches with olive oil.
  2. Grill the peaches: Place the peaches, cut side down, on the grill and cook for 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Remove from grill and let cool slightly. Slice into wedges.
  3. Prepare the dressing: In a small bowl, whisk together balsamic vinegar, olive oil, honey (if using), salt, and pepper until emulsified.
  4. Assemble the salad: In a large serving bowl or platter, arrange the arugula.
  5. Add burrata and peaches: Gently tear or slice the burrata cheese and place it on top of the arugula. Arrange the grilled peach wedges around the burrata.
  6. Drizzle with dressing: Drizzle the balsamic vinaigrette over the salad.
  7. Add toppings (optional): Sprinkle with fresh basil or mint leaves, toasted nuts, balsamic glaze, or microgreens, if desired.
  8. Serve immediately: Serve the salad immediately to prevent the arugula from wilting.
