2–3 medium apples (Honeycrisp, Fuji, or Granny Smith), cored and thinly sliced
1 cup walnuts, roughly chopped
4 cups mixed greens (arugula, spinach, or spring mix)
Honey Dressing:
3 tablespoons honey
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Salt and freshly ground black pepper to taste
Optional Add-ins:
Dried cranberries
Crumbled feta or goat cheese
Sliced avocado
Red onion, thinly sliced
Instructions
Prepare the apples: Wash and core the apples. Thinly slice them, keeping the peel on.
Prepare the walnuts: Roughly chop the walnuts.
Make the dressing: In a small bowl, whisk together honey, olive oil, apple cider vinegar, salt, and pepper until emulsified.
Assemble the salad: In a large bowl or on a serving platter, place the mixed greens. Arrange the apple slices on top of the greens.
Add walnuts and other add-ins: Sprinkle the chopped walnuts and any optional add-ins (cranberries, cheese, etc.) over the salad.
Dress and serve: Drizzle the honey dressing over the salad just before serving. Toss gently to combine.
Notes
Use a variety of apples for a mix of sweetness and tartness.
Toast the walnuts lightly in a dry skillet for enhanced flavor.
Adjust the honey dressing ingredients to your taste preferences.
Get creative with your add-ins!
This salad is best served immediately to prevent the apples from browning and the greens from wilting.
If making ahead, keep the dressing separate and dress just before serving.
