Ice Cream Sandwich Cake

A fun and easy no-bake dessert featuring layers of ice cream sandwiches, ice cream, and your favorite toppings. Perfect for parties and summer gatherings!

Ingredients

  • Ice cream sandwiches (vanilla, chocolate, or your favorite flavors)
  • Ice cream (various flavors)
  • Whipped cream
  • Toppings (sprinkles, chocolate chips, crushed cookies, fresh fruit, chocolate sauce, caramel sauce, etc.)

Instructions

  • Prepare the base: Line a 9×13 inch baking dish (or similar size) with parchment paper. Arrange ice cream sandwiches in a single layer on the bottom of the dish, trimming them if necessary to fit snugly.
  • Layer with ice cream: Slightly soften your chosen ice cream flavors. Spread a layer of ice cream over the ice cream sandwiches.
  • Add another layer of sandwiches: Place another layer of ice cream sandwiches on top of the ice cream layer.
  • Repeat layers: Repeat steps 2 and 3, layering ice cream and ice cream sandwiches until you reach your desired height (2-3 layers is recommended).
  • Frost with whipped cream: Spread whipped cream over the top and sides of the cake.
  • Add toppings: Decorate the cake with your favorite toppings.
  • Freeze: Cover the dish with plastic wrap and freeze for at least 4 hours, or preferably overnight, to allow the cake to set completely.
  • Serve: Cut the cake into squares and serve immediately.

Notes

  • Let the ice cream soften slightly before spreading, but don’t let it melt completely.
  • You can use any combination of ice cream sandwich and ice cream flavors you like.
  • Get creative with your toppings!
  • For easier slicing, run a sharp knife under warm water between cuts.
  • Store leftover cake in an airtight container in the freezer.
  • For a gluten-free version, use gluten-free ice cream sandwiches. Dairy-free options are also possible.
