Ingredients
Ice cream sandwiches (vanilla, chocolate, or your favorite flavors)
Prepare the base: Line a 9×13 inch baking dish (or similar size) with parchment paper. Arrange ice cream sandwiches in a single layer on the bottom of the dish, trimming them if necessary to fit snugly.
Layer with ice cream: Slightly soften your chosen ice cream flavors. Spread a layer of ice cream over the ice cream sandwiches.
Add another layer of sandwiches: Place another layer of ice cream sandwiches on top of the ice cream layer.
Repeat layers: Repeat steps 2 and 3, layering ice cream and ice cream sandwiches until you reach your desired height (2-3 layers is recommended).
Frost with whipped cream: Spread whipped cream over the top and sides of the cake.
Add toppings: Decorate the cake with your favorite toppings.
Freeze: Cover the dish with plastic wrap and freeze for at least 4 hours, or preferably overnight, to allow the cake to set completely.
Serve: Cut the cake into squares and serve immediately.
Notes
Let the ice cream soften slightly before spreading, but don’t let it melt completely.
You can use any combination of ice cream sandwich and ice cream flavors you like.
Get creative with your toppings!
For easier slicing, run a sharp knife under warm water between cuts.
Store leftover cake in an airtight container in the freezer.
For a gluten-free version, use gluten-free ice cream sandwiches. Dairy-free options are also possible.
