  • Lime Slaw:
    • 4 cups shredded green cabbage
    • 1 cup shredded red cabbage
    • 1/2 cup shredded carrots
    • 1/4 cup chopped cilantro
    • 1/4 cup lime juice
    • 1 tablespoon honey
    • 1/4 teaspoon salt
    • Pinch of chili powder (optional)
  • Tacos:
    • 12 corn or flour tortillas
  • Toppings (Optional):
    • Avocado, sliced
    • Pico de gallo
    • Sour cream or Greek yogurt
    • Hot sauce
    • Lime wedges

Instructions

  • Marinate the Shrimp: In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Add the shrimp and toss to coat. Marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
  • Prepare the Lime Slaw: In a large bowl, combine shredded green cabbage, red cabbage, carrots, and cilantro. In a separate small bowl, whisk together lime juice, honey, salt, and chili powder (if using). Pour the dressing over the cabbage mixture and toss to combine.
  • Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  • Warm the Tortillas: Warm the tortillas in a dry skillet or over a gas flame for a few seconds per side, until pliable.
  • Assemble the Tacos: Fill each tortilla with shrimp and top with lime slaw. Add any desired toppings, such as avocado, pico de gallo, sour cream, or hot sauce. Serve immediately with lime wedges.

  • Shrimp: Fresh or frozen shrimp can be used. If using frozen, thaw completely before cooking.
