3 1/2 cups shredded coconut (sweetened or unsweetened)
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
Pinch of salt
Optional:
Chocolate chips or chopped nuts
Melted chocolate for drizzling
Instructions
Combine ingredients: In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until all the coconut is evenly coated.
Shape macaroons: Using a tablespoon or small cookie scoop, scoop portions of the mixture and shape them into mounds.
Arrange: Place the mounds onto a parchment-lined baking sheet, leaving some space between each macaroon.
Chill: Refrigerate for at least 1 hour (or longer) to allow the macaroons to firm up.
Optional Drizzle: If desired, drizzle with melted chocolate after chilling.
Notes
If the mixture is too sticky, you can add a little more shredded coconut.
You can customize the flavor by adding chocolate chips, chopped nuts, or other mix-ins to the coconut mixture.
For a richer flavor, use full-fat sweetened condensed milk.
Store in an airtight container at room temperature for up to a week, or in the refrigerator for longer. You can also freeze them for several months.
