  • 1/2 cup grated Parmesan cheese

  • 1/4 cup all-purpose flour

  • 1 large egg

  • 2 cloves garlic (minced)

  • 2 tbsp fresh parsley (finely chopped)

  • Oil (for frying or baking)

  • 1 cup breadcrumbs (for coating)

For the Garlic Parmesan Dip:

  • 1 cup sour cream or Greek yogurt

  • 1/2 cup grated Parmesan cheese

  • 23 cloves garlic (minced)

  • 2 tbsp olive oil

  • 1 tbsp fresh parsley or chives (chopped)

  • Salt and pepper (to taste)

  • Optional: 1 tsp lemon juice or red pepper flakes

Instructions

Step 1: Prepare the Potatoes

  1. Wash, peel, and cut the potatoes into even-sized chunks.

  2. Place the potato chunks in a pot, cover with cold water, and add a pinch of salt.

  3. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

  4. Drain the potatoes and let them cool slightly before mashing until smooth.

Step 2: Make the Croquette Mixture

  1. In a large bowl, combine the mashed potatoes, grated Parmesan, minced garlic, chopped parsley, flour, and egg.

  2. Season with salt and pepper, and mix until well combined. Avoid overmixing.

  3. Shape the mixture into small cylinders or ovals, about 2 inches long.

  4. Roll each croquette in breadcrumbs, ensuring an even coating.

Step 3: Cook the Croquettes

For Frying:

  1. Heat oil in a pan over medium heat.

  2. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side.

  3. Drain on paper towels to remove excess oil.

For Baking:

  1. Preheat the oven to 400°F (200°C).

  2. Place the croquettes on a lined baking sheet and drizzle with oil.

  3. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.

Step 4: Prepare the Garlic Parmesan Dip

  1. In a bowl, combine sour cream or yogurt, grated Parmesan, minced garlic, olive oil, and chopped herbs.

  2. Season with salt, pepper, and optional lemon juice or red pepper flakes.

  3. Mix well and refrigerate for at least 30 minutes to let the flavors meld.
